Rub the zucchini and drain well. Rub the pepper and garlic. In a bowl mix the bread (after drain it) with the zucchini, pepper, garlic, eggs, a little oil, a little vinegar, dried mint, salt and pepper until to become a homogeneous mixture. Cut carefully a &#8220;cap&#8221; of the tomatoes, peppers, zucchinis and eggplants and place them in a baking dish. With suitable spoon carefully empty the vegetables, being careful not to pierce. Finely chop the pieces of tomatoes, eggplants and zucchinis. Finely chop the parsley, mint, onions and the garlic. In a bowl, mix all the -chopped ingredients and add the rice, olive oil, salt and pepper. Stuff the vegetables one by one till the three quarters and cover with the \u201ccups\u201d. Add to the pan the chopped potatoes filling the gaps so the vegetables not to empty from the filling.
